Light dinner Vibes

Tired or not in the mood to cook? Here is a simple and healthy dish ready in few minutes. All you need is:

2 sweet mini peppers

5-6 cherry vine tomatoes

2 slices of bread

1 carrot 

10 olives (green or black or both)

1 tea spoon of capers

2 small beetroot

Parmigiano Reggiano shavings

salt,black  pepper, oil olive, aceto balsamico  

Toast the bread in frying pan, cut in small pieces together with mini peppers, tomatoes and beetroot, grate the carrot, add olives, capers and parmigiano reggiano shaving, salt, black pepper, olive oil and aceto balsamico (or few drops of lime juice), mix all and serve.
